Amaranth was designated by the National Academy of Sciences of the United States as "The best food of plant origin for human consumption."

It comes from a plant that can reach up to 3 meters in height and is from the amaranthacea family, which includes around 800 species of amaranth whose characteristics change depending on the environment and region in which they are produced.

The amaranth plant has a panicle that contains numerous small flowers, which house a small seed that represents the main product of the amaranth plant, with which cereals, flour, sweets and other products are made.

Along with corn, beans and chia, it was one of the main foods of the cultures of America and the main source of protein. It was so appreciated that it was part of the religious rites of these cultures which caused that with the arrival of the Spanish its cultivation was almost eliminated.

Amaranth is a very important food and is consumed mainly as a popped cereal, from which are made: alegrías, a typical Mexican sweet, cereals, granola, tamales, atoles, pinole, marzipan and other delicious products made with its flour such as tortillas, cookies , pancakes, horchata and chocolate drinks. It also produces oils and dyes that are used in cosmetology or the chemical or pharmaceutical industry.

Among its great nutritional properties are:

- Being one of the most important sources of protein, as it surpasses most cereals.

- Be a source of minerals and natural vitamins: A, B, C, B1, B2, B3.

- Being a source of folic acid, so necessary in pregnant women.

- Be a source of niacin, calcium, iron and phosphorus.

- Contains amino acids such as lysine.

Among the medicinal effects, they are attributed:

- Control of diarrhea.

- Prevention of colon cancer.

- Prevents and helps in the control of osteoporosis, diabetes mellitus, obesity, high blood pressure, constipation and diverticulosis, chronic kidney failure, liver failure, hepatic encephalopathy, celiac disease and is recommended in the diet for autistic people.

- It is also recommended for patients with dental-maxillary, geriatric, malnutrition and oncological problems.

- It is recommended as part of the hyperenergetic and hyperprotein diets and in the hypocholesterolemic ones.

- Due to its energy content, it is also beneficial for patients with high caloric requirements.
